Ingredients:
- 1 cup pitted dates
- 1/2 cup date protein powder
- 1/4 cup almond butter (or other nut butter of your choice)
- 1/4 cup ground almonds
- 1 teaspoon vanilla extract
- A pinch of salt
- 2-3 tablespoons water (depending on consistency)
Directions:

Place the pitted dates in a bowl and pour boiling water over them. Let them soak for 10 minutes to soften them.

Drain the soaked dates and place them in a blender or food processor.

Add the date protein powder, almond butter, ground almonds, vanilla extract and a pinch of salt.

Mix the ingredients at low speed. If the dough seems too dry, add 2-3 tablespoons of water as needed until you get a sticky mixture.

When the mixture is evenly mixed and has a sticky consistency, form small balls out of it. You can lightly wet your hands with water to make shaping easier.

Roll the balls in additional date protein powder or ground almonds to cover and place on a tray.

Allow the date protein balls to firm up in the refrigerator for about 30 minutes.

Once cooled, the balls are ready to enjoy! You can store them in an airtight container in the refrigerator.
